From the Ministry of Culture announcing the results of the selection of “1 Province 1 Menu, Honoring Local Food, Lost Taste… The Lost Taste” for the year 2024, with over 500 menus for people to vote on nationwide, with 199,000 people in every province voting on the menus, with the “Bamboo Shoot Dessert” menu from Prachin Buri Province receiving the highest number of votes at 22,945 points.

Mrs. Som Khamwiang, 62 years old, a vendor who makes bamboo shoot dessert in Kabin Buri District, revealed that the process of making bamboo shoot dessert takes quite a long time, starting from collecting bamboo shoots in the garden, peeling them, shredding them into strips, then boiling them. After boiling, they are molded or squeezed out the water. They also have to prepare the ingredients, such as flour, cutting banana leaves into pieces to wrap them, then cutting coconut leaves and tearing the leaves from the stems, preparing them for the next step. Then, they grate the coconut and prepare it to sprinkle on top of the bamboo shoot dessert.
Ingredients prepared for mixing into the bamboo shoot dessert are sticky rice flour, rice flour, palm sugar, and salt. Mix them with the shredded and boiled bamboo shoots. Scoop them into banana l
eaves, sprinkle the shredded coconut on top, and wrap them neatly in banana leaves before steaming. The process mentioned above takes no less than 4 hours before becoming bamboo shoot dessert, an ancient dessert that is hard to find.
As for Auntie Som, after steaming the bamboo shoot cake, she had her niece take it to sell around the village. It took less than 30 minutes to sell out. Auntie Som said that she has been selling bamboo shoot cake since she was 20 years old until now. The price is 5 baht per pack so that the new generation can eat it and the old generation will not forget the traditional dessert which is a famous dessert of Prachin Buri Province.
